Irish soda bread

Some days, I just need fresh bread, without the wait or the fuss. That’s when I turn to the super simple soda bread. No yeast, no rising time, just a few ingredients and about 10 minutes of hands-on time. And yes, the Thermomix does most of the work for me!

You just need 250g plain flour, 250g wholemeal flour, 1 tsp bicarb, 1tsp salt and 400ml buttermilk. If you can't get buttermilk, easily make your own by mixing milk with lemon juice and let it rest for 5 mins.

  • I preheat the oven to 200°C, then I add the flours, bicarb and salt to your Thermomix bown and mix for 5 seconds on Speed 5.

  • Then I add the buttermilk and mix for 10 sec on Speed 5. After that, I knead it for 30 seconds.

  • I tip the dough onto a floured surface, shape it into a round, and cut a little cross on top. This dough is very sticky so just turn the bowl upside down, twist the base of the blade and let the dough fall onto a floured surface.

  • Into the oven it goes for about 35 minutes. When it sounds hollow underneath, it’s done! I let it cool (just a little), then slice it up with some butter… heaven.
